There is no limit to the ingenuity when making artisanal ice cream flavors. This is the basic process:


Salted Caramel Pretzel Ice Cream is one example.

Ingredients

  1. - 2 cups heavy cream
  2. - Four big egg yolks - 3/4 cup granulated sugar - 1 cup whole milk
  3. - Half a cup of salted caramel sauce - One teaspoon of vanilla extract
  4. - Crushed pretzels, one cup


Method:


1. Set Up the Foundation: - The heavy cream and whole milk should be heated in a saucepan over medium heat until they start to simmer. Take off the heat.

2. Whisk Eggs and Sugar: - Beat the egg yolks and granulated sugar in a different basin until the mixture is pale and slightly thickened.

3. Temper the Eggs: - To temper the eggs and avoid scrambling, slowly add a little amount of the heated cream mixture to the egg mixture while whisking continuously.

4. Combine Mixtures: Whisk continuously as you gradually return the tempered egg mixture and the leftover cream mixture to the pot.

5. Cook the Custard: - Change the heat back to medium and cook the custard, stirring constantly, until it thickens to the point where it coats the back of a spoon, which should happen at 170°F or 77°C. 

Keep from boiling.

6. Strain and Chill: - To ensure there are no lumps, strain the custard into a clean bowl using a fine-mesh strainer.

Blend in the extract of vanilla.

Once completely cold, let it sit in the refrigerator covered for at least 4 hours or overnight.

7. Churn the Ice Cream - Transfer the chilled custard into an ice cream machine and process it in accordance with the manufacturer's directions until it thickens to the consistency of soft serve.8. In the final few minutes, Add Mix-ins to create your own artisanal ice cream flavors.
